Flavor Profile

Distinctive olive, nuts and wood, with a chocolatey center leaning towards prune and raisin, plus light acidity, strawberry and hint of jasmine.

Innovation and processing

These beans are well-fermented and cured in barrels that were formerly used for the production of rum. Our cacao is stored in these barrels for months. During this period, all the aromas of wood and rum penetrate the beans.
