El Ramonal
El Ramonal is one of our established Denomination of Origin, since 2012. El Ramonal is a hilly region in the eastern part of Duarte Province known for splendid views, lush vegetation, and small cacao farms built on steep slopes.
Carefully protected from soil erosion by strategic planting of useful ground covers and towering shade trees, it supports a wealth of small inter-cropped organic cacao farms that can look like intimate tropical paradises or inexhaustible home gardens.
The particular hilly topography of El Ramonal, its thermal differences (especially in winter) between night and day, robust genetic stock, and motivated farmers work together to create a fascinating origin that is very distinct from the mellower cacao from lower sectors of Duarte province.
Flavor Profile
Notes of red, dried and fermented fruits, a light touch of red wine and a delicate hint of acidity. Medium chocolate flavor.
Harvest & Social Responsibility
El Ramonal farmers working with Rizek’s social responsibility arm, FUPAROCA, have learned the importance of protecting slopes from soil erosion by planting useful ground covers such as peanut - Arachis pintoi, batata (sweet potato, Ipomea batatas) and auyama (Caribbean squash, Cucurbita moschata) and caring for shade trees like the amapola (Erythrina poeppigiana).
This forest giant, to which farmers attribute all kinds of beneficial properties, towers over cacao providing just the right amount of shade.
